Crock Pot Parmesan Garlic Quick Bread

~Day 3~

I am running really low on groceries right now, so it was kind of difficult to come up with something today. We still had potato soup and mac n' cheese left over from the last 2 days, so I really didn't need to cook anything big. I tried to think of something that would go well with the leftover potato soup and the only thing I could think of was salad and bread. I'm pretty smart and thought to myself that salad just wouldn't work in a crock pot. Ha!  :)  I searched pinterest for a crockpot bread recipe that would be easy for the hubs to throw together as I was at work. I had one pinned, but it involved a little more so I scratched it and found this one for tonight's dinner.

The verdict: I thought it was good, but lacked the garlic and Parmesan flavors. If we make this again we will definitely put more garlic in it for sure! Over all, not bad and we ate it. :)

Crock Pot Parmesan Garlic Quick Bread

(Tiffanee stated to use a 3-4 quart crockpot. I only have a big one so I made it in there and it was fine. We did end up taking it out at the end and broiling it for about 10 minutes to toast it a little more.)

1 1/2 cups baking mix (I used Bisquick)
2 egg whites
1/2 cup milk
1 Tablespoon minced onion
3/4 teaspoon garlic salt (or powder)
1/2 cup parmesan cheese
1/2 cup shredded cheddar cheese (optional)

Combine all ingredients. Save a little of both cheeses to sprinkle on the top.  Pour into a well greased crockpot. Sprinkle with the remaining cheese. Cook on high for 1 hour.

Makes 8 servings
