My schedule as a full time nurse makes food difficult period. I envy (I know I shouldn't) those moms who can stay at home and cook. Right now my schedule is hectic, to say the least. I'm suppose to work 9am-7pm 4 times a week, but sometimes I'm pushed back and other times I'm there way past 7pm. *Sighs* I'm praying God will show me what I should be doing and praying even more that he'll provide me with a job that I can see my lil bean more often and have a more set schedule. Anyways...here's this weeks plan:
MONDAY:
breakfast: Yogurt with Granola & piece of fruit
lunch: Guacatuna Salad in a lettuce leaf with a piece of fruit
dinner: Tilapia, Cracklin Cauliflower, & salad
TUESDAY:
breakfast: Vegetable Quiche To Go
lunch: Grilled Chicken Sandwich with Avocado & piece of fruit
WEDNESDAY:
breakfast: Baked Oatmeal with Blueberries and Bananas
THURSDAY:
breakfast: Yogurt with Granola
lunch: MIL's Vin & Oil Salad (recipe coming!) with Tuna Sandwich
FRIDAY:
breakfast: Western Omelet Potato Skins
lunch: Bangin Good Shrimp with basmati rice and leftover vegetables
dinner: Broccoli Salad with Thai Peanut Sauce with chicken
SATURDAY:
breakfast: LEFTOVERS
lunch: LEFTOVERS
dinner: Caramelized Chicken with Jalapeno Cream with basmati rice and roasted garlic parmesan brussel sprouts
breakfast: Huevos Rancheros
lunch:Marinated Ranch Broiled Chicken , crockpot baked potatoes, salad
dinner: LEFTOVERS
SNACKS: fruit, 94% FF popcorn, raw veggies, nuts
DRINKS: WATER, WATER, WATER, hot tea, coffee, and...WATER!
