Monday and Tonight's Dinners!

So last night I fixed Spinach Stuffed Shells. They were okay...needed something else though. I'll have to try a different recipe next time. Here's the pic:



Tonight we had Hamburgers and Quick & Easy Oven Fries. Delicious! Here's the pic with recipe for oven fries below:


Quick & Easy Oven Fries
Ingredients:
2 lb. baking potatoes
1/4 c. plus 1 tbsp. olive oil
2 cloves garlic, crushed (if I'm in a hurry I just use garlic powder)
1 tbsp. italian seasoning
1 tsp. salt
1 tsp. black pepper
2 tbsp. finely grated parmesan cheese (I use the prepackaged Kraft shredded parm cheese)

Directions:
1. Preheat oven to 400 degrees. Scrub potatoes ,then cut into even-size wedges to ensure unifrom cooking.
2. In large resealable plastic bag, combine the olive oil, garlic, italian seasoning, salt, and pepper. Add potato wedges to bag and shake well to coat.
3. Spread potato wedges in single layer on large baking sheet. Bake 20-25 minutes. (I also do mine 25 minutes). Turn halfway through baking time.
4. Sprinkle parm. cheese over potatoes. Return to oven and bake until crisp and golden, about 10 minutes longer. Serve hot.
